Raw Carrot and Apple Granola

This has to be one of my favourite breakfasts. Its best made at least 2 hours ahead of when you are going to eat it. The night before is even better. Another bonus is that this recipe makes enough for two to three serves so you can save some in the fridge for the next two days.

Ingredients

1/2 cups rolled oats
1 grated apple
1 large grated carrot
1/2 cup crushed walnuts or almonds or a mix of the two
1/4 cup raisins or sultanas
1/4 cup pumpkin seeds
1/4 cup flax seeds
1 tsp cinnamon
Pinch of nutmeg
Juice of 2-3 oranges

Method

Mix everything in the first group of ingredients (so not the coconut or the yoghurt) together in a bowl and place in the fridge for all the flavours to merge and the raisins to become plump and juicy.

Serve with the toasted coconut and natural yoghurt and enjoy that taste sensation.
